I love it so much that I actually use this sauce for multiple recipes that previously would have included cheese, such as a version using only 1/2 cup of water on homemade pizza to replace the cheese. I will admit, with a high speed blender, I usually just soak for about 30 minutes in hot water and then throw in, so maybe that is the problem. I loved the spice, just the right amount. It was more of a creamy alfredo, in my opinion. I use coconut milk in place of almond milk and store-bought Earth Island vegan Parmesan because our family has a nut allergy, but otherwise follow the recipe exactly and it turns out amazing every time. My non-vegan family ate it and all went back for seconds. So if you’re making it for 2 people it might be a good idea to halve the recipe because leftovers are not going to be the same. Super Cheesy Omg I made this today and it is officially the best vegan pasta I’ve ever made. It’s literally one of my favorites to date! Our most frequently used vegan cheese is parmesan. Just one quick suggestion, that the prep time may want to be increased to include the time it takes to roast the head of garlic – it does add a good amount of time. I saw that people have suggested using miso in other recipes, but I’m allergic to soy as well. I baked the dish @ 500 for 15min just to brown the top. I like it because unlike soy or almond milk, in a blind taste test you can’t tell the difference from the real milk. Australian Vegemite?) The fact that some cheeses are lactose-free doesn’t address some of the other issues people become vegans because of: how expensive mammal cheese is; the environmental impact of cows: his much more potable water they require and that half of our potable water is used to raise cows, methane production which is shorter-lived than CO2 but more dangerous, how much more energy it requires to produce animal protein and dairy than plant protein, how much farm animals suffer, the pollution and runoff cows produce, what happens to the calves when cows are impregnated so they’ll make milk, and the fact that animal proteins are inflammatory… so it may be lactose-free for you, but not happy or healthy for cows, calves or the environment. Mine came out very liquidity and not creamy at all and I followed each step to the t. I’m so confused. I made this tonight and honestly it is amazing. PS. I followed directions but added a dash of cayenne and garlic powder (plus the 3-4 cloves of fresh) to the recipe to give it a little extra kick. We wouldn’t recommend it as it has a strong flavor. I think for the slightly brighter color I added a pinch of paprika at the last moment (not for any flavor, mainly for photos). I’m in love. Thank you for this tip! Then I added the green chillies, spices, and 1 steamed sweet potato, and used my immersion blender to mix it all up. (The only thing I did differently was I sautéed an onion instead of garlic- just my own preference. I did make some changes: I used two slices of a small jalapeño pepper (definitely should’ve used more, but I was scared it would turn super spicy) instead of the canned chiles because I didn’t have any, and added around 3-5 tsp of glutinous rice flour (tapioca starch works too!) The closest thing I have that grinds fine enough is the coffee grinder, and I’m not gonna use that on an entire cup of cashews. YUM! I did make extra sauce and coated the cooked noodles in butter and then baked the whole thing with breadcrumbs on top for a few minutes…also used fresh jalapenos and cauliflower for some extra veggies :P My new-to-vegan food foodie boyfriend also really liked it.
